I was craving pizza, and was looking for alternatives to the cauliflower/cheese pizza crust.

I came across several sites for a Paleo/Primal pizza  recipes and after many attempts of what might be eatable and not taste like cardboard I combined the recipes from  Your Lighter Side and Primal Journey  and with some tweaking of my own, this is what I came up with:

A pizza crust that is Paleo/Primal friendly and can be eaten with your hands and still taste good cold the next day.


Chicken/Cheese Pizza Crust Recipe


2 cups cooked coarsely ground organic chicken breast or whatever chicken you have on hand.

1 1/3 cups packed  shredded raw organic goat mozzarella cheese.

1/4 cup flaxseed

1 egg (organic, pastured raised)

1 Tbsp dried parsley

1 tsp basil

3/4 tsp onion powder

3/4 tsp garlic powder



1 cup shredded  raw organic goat cheddar cheese

1 cup  shredded  raw organic goat mozzarella cheese

1/2 cup natural pizza sauce

Preheat oven to 425 degrees Fahrenheit.

Take your baked chicken and process the meat into a fine coarsely ground consistency. You can use a blender, or food processor for this.

Add your cheese and mix the chicken and cheese together till well blended.

Then add the rest of the ingredients, it will turn into a slight sticky dough mixture. I used my hands to mix, but you can use a mixture/ food processor or spoon.

Press your chicken/cheese mixture onto a parchment paper lined cookie sheet/pizza pan or roll the dough into a ball and place the other piece of baking paper on top and use your rolling pin to flatten it out evenly so that it covers your whole pizza pan.

Bake for 15 minutes.

Pull out of oven and top with your sauce first, then the cheeses, and  last any topping you like. (remember to pre-cook the meat in a pan or oven before topping your pizza with it)

Put pizza back in oven under boiler/grill for 5 min to cook toppings or in till the cheese melts.

Let cool for a couple minutes.

Slice and serve.

This makes a medium size pizza  – 12″ in diameter.
