Paleo/Primal Mac and Cheese: Cauliflower

I was craving some good old Mac and Cheese the other night and was wondering how I would be able to satisfy that craving with out using grain. So I stated to adapt what I could eat and here is my recipe for Mac and Cheese.

Be forewarned it does call for goat cheese so it might not adhere to a strict Paleo/Primal diet that calls for no dairy.

But some times we just have to splurge.

You will find I have substituted cow dairy for goat dairy in many of my recipes. Goat Cheese seems to be more digestible for many, compared to dairy from cows.


Mac and Cheese Recipe


1 large raw organic head cauliflower, cut into small florets

Fat to crease dish

½ cup organic coconut cream

1 Tsp mustard

1 ½ cups shredded  raw grass fed organic goat cheddar cheese, plus ½ cup for topping casserole

¼ Tsp freshly ground black pepper

1/8 teaspoon garlic powder or one glove of fresh organic garlic

An 8X8 inch baking dish

Preheat oven to 375 degrees F. Bring a large pot of water to a boil.

Grease the baking dish with fat (lard, coconut oil……)

Steam the cauliflower or if no steamer cook cauliflower in the boiling water until crisp-tender, about 5-10 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish and set aside.

Over Med. heat bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in the 1 1/2 cups of the cheese, pepper and garlic and whisk just until the cheese melts, about 1 to 3 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot, about 15-20 minutes
